WHY: Piuma worked for nearly a dozen years in nearby Cambridge at Oleana, Sortun’s groundbreaking restaurant that foreshadowed the national budding ardor for Turkish and Middle Eastern cuisines. At Sarma, Piuma masters her own evocative translations, inspired by the mezze feasts served at meyhanes (Turkish taverns).
